Balsamic Beet Noodle Bonanza

Red Beet Noodles (16 Oz)

Ingredients

  • Red Beet Noodles (16 Oz)
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Chopped Fresh Parsley
  • 1 Teaspoon Grated Orange Zest

Steps

  1. Preheat oven to 425 F
  2. Toss Noodles in a Bowl with Olive Oil & Vinegar
  3. Season with Salt & Pepper
  4. Spread Beets in an Even Layer on Baking Sheet
  5. Roast Beets for 20 Minutes, Stirring Twice
  6. Sprinkle Parsley & Orange Zest Over Noodles & Gently Incorporule

*For a crispier noodle, roast for 10-15 additional minutes, stirring frequently.
