Squash nā€™ Shrimp Scampi

Yellow Squash Noodles

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • Kosher Salt
  • 3 Garlic Cloves, Minced
  • Yellow Squash Noodles (16 oz)
  • 2 Tablespoons Italian Parsley
  • 16 oz. Large Shrimp, Peeled & Deveined
  • 2 Tablespoons Unsalted Butter
  • Pinch of Red-Pepper Flakes
  • 1 Tablespoon Fresh Lemon Juice

Steps

  1. Heat a large skillet over medium high
  2. Add olive oil
  3. Add shrimp
  4. Season shrimp with salt
  5. Cook shrimp in a single layer for about 3 minutes
  6. Flip shrimp once opaque
  7. Remove from Pan
  8. Reduce Heat to Medium
  9. Add Butter, Garlic, & Red Pepper Flakes to Skillet
  10. Cook for 2 Minutes
  11. Add Squash Noodles, Cooking for 4 Minutes
  12. Remove from Heat
  13. Add Lemon Juice, Parsley, & Shrimp
  14. Season, Combine, & Serve
